About

Darien native and Chef/Owner Peter Crawford’s longstanding relationships with the best suppliers and decades of training in top restaurants have brought a new level of exceptional service and expertise to the greater Darien community. The Darien Butcher Shop Staff cater to these local tastes with a real passion for excellent food and knowledge about it. At DBS, you may come in for a pork chop, but you will likely leave with a new recipe, fresh bread or veggies, some BBQ inspiration…and a new friend.

Born and raised in Darien, Connecticut, Peter Crawford returns to his hometown to pursue his culinary passion for fine food and superior meats. A Darien High School ‘95 alumni who participated in both Wrestling and Football, Peter’s childhood memories surround his grandmother’s kitchen and the inspiration he gained from her rustic, home-style meals, and use of fresh produce and prime quality meat from the family cattle farm.

Peter’s early food experiences and restaurant work inspired him to attend The New England Culinary Institute (NECI) in Burlington, VT. After graduating with advanced placement, Peter went on to work alongside some of the greatest chefs of our time: Charlie Palmer, Jean-Georges, Neil Gallagher and Terrence Brennen. Allured by invitations to work as a private chef on celebrity yachts and vacations, Peter left the grind of New York kitchens to explore foodie adventures abroad — eventually returning to the New York restaurant scene holding management positions at such acclaimed restaurants as Bouley and The Oak Room.

Since his New York days, Peter has overseen the opening of four additional restaurants and is now focused on sharing his experience and appreciation for the finest meats with his distinguished hometown neighbors and friends.
